My uncle Steve brought my dad and I to his favorite noodle spot. There are hundreds of noodle joints like this in every city o Vietnam.
Like rice (com) noodles are a staple in Vietnam. You can get a cheap filling meal anywhere you see a 'Pho' sign. There are maybe a dozen other types of noodle to be had.
I can't remember all the vairous names but the noodle has a very regional character. The noodles found in the western province of Tay Ninh are different than the Ha Noi Pho.
Pho, pronounced, fa'a with a little hiccup in the A sound, is a mainstay in the local diet. You can get any kind of meat in the soup you wish. Some Pho spots specialize in a certain kind of noodle style or meat. Around dinner time my Dad developed an upset tummy. The soup was probably days old. Sanitation is not much of a concern at these places.
